You’ve decorated the tree, wrapped all the presents, the guests have RSVP’d to your festive dinner party invitation, and now it’s time to steal the show with your best family-approved recipes. So that you can serve your festive party to the perfect temperature, we have gathered all the inspiration and guidance you need, for the Elite Pubs ultimate guide to Christmas cooking.

To start off the irresistible list of Christmas classics, it’s only right we begin with a traditional festive soup with a twist. The soup is always an easy family favourite, so why not spice it up with our Vegan spiced roasted parsnip soup, toasted chestnuts, and seeds. With a quick prep time you can follow easy steps and add your creative flare as you go, just like our chefs do across our venues.

Spread your diced parsnips, garlic cloves, onion, and tomatoes on a baking tray, top with turmeric and cumin, and roast them until tender. Blend it all together with vegetable stock until smooth, pour it into a pan and heat until simmering. Once your soup is ready to serve, sprinkle on your toasted chestnuts and seeds. Serve with some warm crusty bread for the perfect Christmas appetiser.

If your guests boast an excitable palette, start your Christmas meal with our Seared king scallops, heritage cauliflower, and chorizo. Quick and easy preparation and cooking time, but with powerful flavours and leaves an executive chef impression. All you need to do is pan-fry your scallops for 2-3 minutes on each side, until it’s springy to touch. Meanwhile, fry your diced chorizo, and boil your cauliflower ready to be plated for a succulent fish starter.

Of course, the Traditional roast turkey is a classic go to, but if you want to really blow your guests away, we recommend taking our classic fillet steak recipe, bursting with seasonal Christmas flavours. Serving the fillet steak with blue cheese & potato gratin, wild mushroom, salsify, and truffle jus. For your gratin, you’ll make layers of potato slices, build with cream and blue cheese, season with salt & pepper, and bake. Serve alongside the fillet steak, cooked to your (likely controversial) preference, fry up your wild mushroom and boil your salsify for an expertly finished pairing.

For a tasty and creative vegan alternative for your Christmas meal, we highly recommend our Vegan festive tagine, with lentils, chickpea, cranberry, cinnamon, and pickled kohlrabi salad. Get that list of ingredients in, fry and stir it all together and simmer to cook. Go as wild as you like with your seasoning. So simple, yet so healthy and indulgent.

Now we come to what some might say is the most important course. It’s time to leave a lasting impression of sweetness and delight. Thankfully, we have you covered for that too!

The caramel crème brulee is a dessert of very little ingredients, yet full of flavour and a mix of textures nothing short of heavenly. Whisking egg yolks, whipping cream and cream to create a hot creamy mixture, pour into a pan to oven bake in a water bath until the centre is just set. Mix sugar and sprinkle on top, caramelizing with a kitchen torch 2 inches above the custard surface, moving evenly to create the perfect crisp top.

If you would like to wrap up your Christmas meal with a dinner party classic, then you should take it up a notch by serving the local cheese’s you’d find in your favourite Elite Pub.
